No shame whatsoever, this recipe I cooked close to as is from the fantastic peeps at RUBIES AND RADISHES, since turning to paleo I have found many paleo sites that offer insight and amazing recipes but it appears my tastes are more on par with the R&R peeps, we may have related tastebuds, a lot of my meals I cook from these guys so if you are thinking of or already embrace the paleo lifestyle and do not already, STALK THE R&R PEEPS FOR THE BEST PALEO RECIPES EVER 🙂
Why just share someone else’s recipe? Because I love food, I want to share joyous food and I need more recipes for work lunches, I am buying a work lunch one day a fortnight and make lunch throughout the week, am running out of tupperware!! This one was ideal to make, I only amended it slightly, I love garlic and ginger so went on the heavier side :). I had to go out for dinner to a friend’s house, I had 30mins at home, I have a slow cooker and I have 1kg of chicken thigh fillets defrosted, it also helped I had most of the ingredients, whipped it all together in the slow cooker in no time, went out to dinner, came home and ready in an hour, which was perfect – I made my crispy sweet potato cubes as a base and voila!! This would also be amazing on greens, R&R use a bed of what looks like silver beet – but I could eat this on a bed of bok choy or even with a side of bacon Brussel sprouts and some steamed honey carrots. Whatever you like, embrace it!!
WHAT YOU NEED:
1kg. skinless chicken thighs (boneless for me but works with both)
½ cup coconut aminos – I literally had to ring around as it was sold out in my area, found a place 20mins away and they put some bottles aside for me – I only had 1/3 cup left but wanted it right – also managed to find a great health food store in the hunt down 🙂
1 tablespoon honey (raw and organic or boooooo)
1 tablespoon fresh ginger grated (be heavy handed – 1.5 TBSP is fine!)
3 garlic cloves, minced
salt and pepper
WHAT YOU NEED TO DO:
- Place chicken in the slow cooker.
- In a small bowl, mix coconut aminos, honey, fresh ginger and garlic cloves.
- Pour the sauce over the chicken and cook on low for 4 to 5 hours.
- Use a slotted spoon to remove the chicken from the slow cooker.
- Serve and enjoy! Or in my case – pre-package nearly a week of lunches for work 🙂
