BEST POTATO SALAD RECIPE IN THE KNOWN UNIVERSE

Like a secret recipe handed down from generation to generation my mum allowed me to make this year’s potato salad, a salad that people literally fight over at the Christmas lunch, the only dish at the Christmas lunch that has no leftovers, a dish hailed by some as the BEST POTATO SALAD IN THE KNOWN UNIVERSE.

Everyone has a family potato salad they love and enjoy and every family is different in their tastes on spud salad – ours has a slight Euro feel to it and while I have called this post the BEST POTATO SALAD RECIPE IN THE KNOWN UNIVERSE – this is my choice and all tastes are subjective – but if you want a good one – you can’t really go past this one!

I also have to apologise – I completely forgot to get a completed photo of the salad and instead present to you a fine pic of me at Xmas lunch hahaha – if you look closely you will see it sitting on my plate 🙂

YOU WILL NEED:

10 medium boiling potatoes

5 hard boiled eggs

2-3 tomatoes

5 medium pickled cucumbers (Polish Ogorki if you can find this particular style) – more or less pending size

1 jar full egg mayo – about 400ml

2 stalks of celery

1 small onion

2 teaspoons piri piri flakes – or just chilli flakes

1 tablespoon of dried parsely – fresh is also fine

1/2 tablespoon of dried chives – fresh is also fine

salt and pepper to taste

YOU WILL NEED TO:

1) Boil the potatoes and eggs separately in advance and allow to cool – boil spuds in the skins – they will just peel off – you will know they are boiled well when you can softly push a fork into them – am sure you have probably boiled potatoes before 🙂

2) Use a huge mixing bowl – the bigger the better – peel the spuds and the eggs and dice them into cubes roughly – and dump in the bowl

3) Dice the pickled cucumbers, celery, tomatoes and onion as small as you can and also dump in the mixing bowl

4) Sprinkle all the herbs on top

5) Elegantly empty the entire jar of mayo on top

6) Now for the fun part – wash your hands, roll up your sleeves and mix the crap out of it like you are performing the clay scene in GHOST with Swayze and Moore – really mush it all up – let it squish through your fingers – the more mixed the better

7) Get it all off your hands, wash your hands again – empty into a nice presentable salad bowl – you can either serve it up as is or cover with cling wrap and refrigerate – I actually prefer the taste the following day after an overnight fridge visit

8) Enjoy the hell out of it – I suggest this as the ham or turkey or basically any BBQ salad accompaniment – it works well with every form of BBQ alcohol also 🙂
